I'm in the process of rebuilding a 69 AMX. I won't say restore because it won't be factory stock, which is what I think a restore is. It should be out of the paint shop in a couple of weeks, and I should have all the engine parts back from the machine shop about the same time.
I had a SC/360 hornet clone a few years ago, and I have a 77 CJ7.

Mine's a '73 with .30 over 360 with Holley carb & Auto Trans.
Diamond Blue MEtallic with Flat Black AMX Spoiler.
Currently in storage.
Missed an opportunity recently on a four door four wheel drive Concorde.
Bright yellow in color. Motor unknown. Transmission unknown (Manual, I THINK. Didn't have a chance to look it over very good)
Now THERE'S an idea... a Concorde painted Yellow Red & Blue a'la Mad Max Police Car :lo1l:
Also looking at a Ford.
1984 Mustang GT. (I Like it, so 8) (hehehe)
Gotta find out what my insurance company would do to me if I got it and find out if my bank would loan me money on a 20 year old Mustang

Day-Um!!
Update on the Mustang I was mentioned before.
Insurance Co. quoted me some Numbers I rather liked.
Insurance - GREENLIGHT
Milage turned out to be slightly BETTER than I'm dealing with now.
Gas - GREENLIGHT
No Happy from the Bank. Said it's too Old. BUT I have another option which would be less painful anyway.
Money - GREENLIGHT
Looks like all my concerns on the car have been addressed in an acceptable fashion.
Oh, darn. It already sold.
Oh well, can't win 'em all.

I have a 75 matador sedan and a 69 javelin I'm building. The dor has a 360 and 727 the 69 will eventually have a 401 with a 727. Also kind of looking for a J-series jeep truck.
